1/2 c. butter
1/3 c. sugar
1 egg, seperated
1/4 tsp. vanilla
1 1/4 c. flour
1/2 tsp. salt
1 c. flaked coconut
1/2 c. apricot preserves


Directions:
Directions:
Cream together Butter and sugar. ADD egg yolk and vanilla, Mix. Sift togetherflour, salt and gradualy add to cremed mixture.
CHILL dough for 2 hours.
Form long rolls about 3/4 inch in diameteron lightly floured surface with hands. CUT of 3/4- inch pieces and shape into balls. Dip into slighty beaten egg white and roll lightly in coconut.
Place on ungreased cookie sheet and press top of each ball gently with thumb. Bake.
Remove at once to cooling rack. When cooled fill centers with preserves.
BAKE: 20 - 25 Min in 35o degree oven.
