2 good-sized potatoes for each person
1 medium onion
8 slices bacon
2/3 cup vinegar
1 cup water
1 cup sugar
2 T. flour
1 hard cooked egg (or more)
parsley (chopped)

Directions:
Directions:
Cook potatoes but do not let get mushy. Slice while still warm, adding chopped onion and salt. Let sit in warm place. Cut up bacon and fry. When crisp take off fire and add mixture of vinegar, sugar, water and flour. Return to fire and cook until it thickens. Add to potatoes. Sprinkle top with chopped egg and parsley. Serve warm.
