1 T. butter or margarine
1/3 cup chopped onion
1 1/2 tsp. curry powder
1/8 tsp. crushed red pepper
2 1/2 pounds sweet potatoes, peeled and cut into 1" cubes
1 large apple, peeled, cored and diced
4 1/2 cups low-sodium broth
1/2 cup coconut milk
1 tsp brown sugar
1/2 tsp garlic powder
Salt to taste
1/4 pound cooked medium shrimp
Toasted shredded coconut

Directions:
Directions:
Heat butter in large saucepan or Dutch oven until melted over medium--high heat. Add the onion, curry powder and crushed red pepper. Cook and stir until onion is tender, about 5 minutes. Add sweet potatoes, apple and broth. Bring to a boil, reduce heat and simmer, uncovered, until sweet potatoes and apple are tender, about 30 minutes. Working in batches, puree soup in blender or food processor until smooth. Return soup to pot and stir in coconut milk, brown sugar and garlic powder. Heat until soup is heated through, stirring occasionally. (Additional broth can be added if needed). Season the soup with salt to taste. Ladle soup into bowls and garnish with shrimp and chives if desired.
