1 can lemon-lime soda 1 lb. perch fillets 2 c. pancake mix ¼ tsp. pepper Oil for frying
Marinate the fillets in soda for 15 minutes. In a shallow bowl, combine pancake mix and pepper. Put a heavy coat of the pancake mixture onto the fish. Heat oil in a skillet and fry fillets for a few minutes on each side, or until fish flakes with a fork.
