1c oil
2 1/2c sugar
3 eggs
1 tsp soda
1 tsp salt
1/4c tsp baking powder
3 tsp vanilla
5 tsp cinnamon
3c flour 2c grated zucchini
Sprinkle of nutmeg
1c nuts

Directions:
Directions:
Mix sugar, oil, and eggs together; add soda, baking powder, salt, cinnamon, nutmeg and flour. Add zucchini, nuts and vanilla. Grease and flour 2 loaf pans (or 5 small). Bake at 350 for 1 hour (check at 45 minutes).
