2 1/2 lbs potatoes, cooked
8-12 oz. sour cream
garlic salt or salt & pepper to taste
2 lbs ground beef
1/2 cup chopped onion
1 medium sweet red bell pepper, chopped
1 tsp garlic salt
1 can condensed cream of mushroom soup
1 can whole kernel corn, drained
1/2 cup milk
2 tbls butter, melted
chopped fresh parsley, optional

Directions:

Mash potatoes with sour cream and add seasonings. Set aside. In skillet, cook beef with onion and red pepper to brown. Drain. Stir garlic salt into meat mixture. Add soup, corn and milk; mix well. Spread meat mixture into 9"x13"x2" baking dish. Top with mashed potatoes. Drizzle melted butter over potatoes and sprinkle on parsley. Bake uncovered at 350º for 30-35 minutes or until heated through.

I like to add Lawry's seasoning to the meat mixture and garlic salt to the potatoes.
