3 Eggs
1 1/2 Cups Sugar
1 1/2 Cups Cooking Oil
2 Tblsp. Mashed Cooked Beets (or Baby Food)
1 1/2 Cups Flour
3/4 tsp. Salt
1/4 Tblsp. Baking Soda
1/2 Cup Unsweetened Cocoa
1 tsp. Vanilla

Cream eggs with sugar. Mix oil and beets. Sift together flour, salt, soda and cocoa and blend into beet mixture. Stir in vanilla.
Turn into greased and floured bundt pan. Bake in preheated 350 oven - 30 minutes or until a toothpick comes out clean.
This cake stays moist for a long time. Frost with White or Chocolate Buttercream icing.
