1 1/2 c. unbleached flour
3/4 c. flaxseed meal
1 c. Kashi© GOLEAN© cereal (crushed to 3/4 c.)
2/3 c. evaporated cane juice crystals
2 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. pumpkin spice
1 1/2 c. finely shredded carrots
1/2 c. raisins
1/2 c. finely chopped walnuts
1/3 c. skim milk
1/4 c. unsweetened applesauce
4 egg whites
1 tsp. vanilla extract

In a large mixing bowl, mix together flour, flaxseed meal, GOLEAN©, evaporated cane juice crystals, baking soda, baking powder, salt, cinnamon, and pumpkin spice. Stir in carrots, raisins, and nuts. In a small mixing bowl, beat egg whites. Add milk, applesauce, and vanilla. Mix well. Pour into dry ingredients and stir until moistened. Do not overmix. Coat muffin tin with cooking spray. Fill tin approximately 3/4 full. Bake at 350ºF for 15-20 minutes.
