1 1/2 cups pimento or pimento spread
1 1/2 c. chicken stock or low fat milk
4 medium potatoes, thinly sliced
1 medium sweet onion, sliced
salt and pepper

Directions:
Directions:
In a medium bowl, blend together pimento or pimento spread and stock or milk; set aside. Butter a 2-quart shallow casserole dish. Layer half of the potato slices in dishes bottom. Top with all of the onions. Sprinkle with salt and pepper and pour half of the cheese mixture evenly over the potatoes. Top with an even layer of remaining potato slices and pour remaining cheese mixture over top. Bake at 350º for 1 1/2 hours or until golden brown and potatoes are very tender. Let potatoes stand at least 10 minutes before standing
