3 qts. milk
3 cups sugar
1 scant cup flour
1 tsp. salt
3 eggs (separated)
1 qt cream or 2 cans of canned milk
Flavoring

Directions:
Directions:
Mix sugar, flour and salt together. Heat milk. Add dry ingredients to milk and stir constantly until it boils. Add some of the hot mixture to beaten egg yolks, then add the egg mixture to the hot mixture and return to the heat and cook 1 minute more. Set pan in cold water to cool. Beat egg whites until stiff, add 4 tbs. sugar. Add custard mixture, cream, egg whites and flavoring to a 6 quart freezer can and freeze.

This recipe came from my Mom's cookbook. I never used the raw egg whites. I always mixed the egg yolks and whites together and added them as the recipe specified for the egg yolks and was careful not to over cook the custard.
