1 c. mashed, cooked pumpkin (or can use canned pumpkin)
¾ c flour
½ tsp baking powder
½ tsp salt
¾ cup white sugar
1 cup chopped pecans
1 cup chocolate chips
1 cup sliced maraschino glazed cherries (I use ½ red and ½ green)
½ lb mixed fruit
1 tsp nutmeg
1 tsp pumpkin pie spice
1 tsp cinnamon
½ tsp ground cloves
3 eggs
1 tsp vanilla
½ tsp almond or rum flavoring

Directions:

Mix all dry ingredients then add fruit, nuts, chocolate chips and mashed pumpkin. Beat eggs until frothy, add flavorings and mix in with fruit/flour mixture. Lightly grease loaf pan then line with wax paper and lightly grease paper. Bake at 350 for 1 hour 10 minutes or until toothpick inserted comes out clean. Turn out and remove wax paper. Wrap with foil while hot.
