3 T. breadcrumbs
2 T. fresh parsley, chopped
3 T. softened butter
6 c. cauliflower florets
2 c. sour cream
1 c. shredded mozzarella cheese
1 c. shredded cheddar cheese
2 T. Dijon mustard
2 T. cornstarch

Directions:
Directions:
Mix breadcrumbs, parsley and softened butter. Set aside.

Blanch cauliflower florets in boiling water for 4-6 minutes. Drain. Transfer to casserole.

Blend sour cream, cheeses, mustard and cornstarch. Spread mixture over cauliflower.
Top with bread crumb mixture.

Bake covered at 350º for 50-60 minutes.
