1 bag frozen sweet corn (ie, shoepeg)
1 can black beans (rinsed)
1 red pepper, chopped
1 red onion, diced
1/2 cup fresh cilantro
2 T. olive oil
2 T. red wine vinegar
2 T. fresh lime juice

Directions:

Mix all together.
Put in large airtight ziploc bag
Marinate in refrigerator 2 hours.

Serve with Tortilla Chips
