Directions:Preheat oven to 400º F. Butter muffin pans. Put Muffin Mix in a bowl. Combine egg and milk in a small bowl. Add all at once to Muffin Mix. Stir until mix is just moistened; batter should be lumpy. Fill prepared muffin pans 2/3 full. Bake 15 - 20 minutes, until golden brown. |

Notes: Variations: Jelly Muffins: Fill each muffin cup 1/3 full with batter. Drop 1 teaspoon jelly on top of batter. Fill cups 2/3 full with batter.
Cheese Muffins: Add one cup grated Cheddar cheese to Muffin Mix before adding liquid ingredients.
Blueberry Muffins: Add 1 cup fresh or frozen blueberries to liquid ingredients before adding liquid to Muffin Mix.
Carrot Raisin Muffins: Add 1 cup grated carrots, 1/2 cup raisins, 1 tsp cinnamon and 1/4 tsp allspice or ginger to Muffin Mix before adding liquid ingredients.
Apple Muffins: Reduce the milk in the basic recipe to 1/4 cup. Add 1/2 cup chopped nuts, 1/4 tsp cloves to muffin mix. Add 1 cup applesauce to milk and egg.
