3 cups zucchini or yellow squash slices 1/4 cup chopped onion 4 T butter 2 eggs, beaten 1/4 cup milk 1/2 tsp. salt 1/2 tsp. pepper 1 cup shredded sharp cheddar cheese 1 cup crushed Ritz crackers
Preheat oven to 350º. Saute squash & onions in butter until tender. Drain. Add remaining ingredients, except cheese & crackers. Spoon into a 9 x 13 inch pan. Top with cheese & crackers. Bake for 20 minutes.
