Jessie's Pumpkin Roll Recipe

Mix #1:
3 eggs
1 cup sugar
2/3 cup canned pumpkin

Beat together

Mix #2:
3/4 cup all purpose flour
cup chopped pecans
1 tsp cinnamon
1 tsp pumpkin pie spice
tsp salt
1 tsp baking powder

Sift all together (except pecans) and mix into mix #1. Beat for 3 minutes Grease jelly roll pan. Put waxed paper and grease again lightly. Pour mixture in pan and sprinkle pecans on top. Bake at 375 degrees for 15 minutes. Spread out thick towel and sprinkle with powdered sugar. Turn out cake onto towel and roll up immediately in towel. Let cool for 4 hours.

8 oz cream cheese
1 cup powdered sugar
4 Tbsp margarine (1/2 stick)
1 tsp banilla
cup chopped pecans

Mix well

Unroll cake (after 4 hours) and frost then roll up. Put on serving platter (seam side down) and sprinkle with powdered sugar.
