1 T. butter, 1 lb. penne pasta, 1/4 c. olive oil, 1 onion, 2
bunches spinach, 1/2 c. freshly grated Parmigiano-Reggiano
cheese, 1 c. mozzarella cheese, 1 c. ricotta cheese, 6 large
eggs, salt & pepper to taste

Preheat oven to 325
Boil water and smear 8 in. springform pan with butter. Cook
pasta 1 min. past al dente. Drain pasta and toss in large
mixing bowl with salt, pepper and 1 T. olive oil. Heat
remaining oil in skillet and add the onion. Add spinach and
reduce heat. Add a pinch of salt and pepper until the
spinach is wilted. Add the spinach to the pasta in bowl.
Toss the pasta mixture together then add the cheeses and
beaten eggs. Fold the mixture over on itself, then put in
springform pan. Bake for 45 min. until the top is golden
brown. Let cool 5-10 min. then unmold. Serve warm with
field green salad.
