2 boneless chicken breasts
6 large stuffing mushrooms
1 medium onion
1/2 cup risotto
1/2 teaspoon green peppercorns, crushed
2 chicken cubes
2 cups water
1 tablespoon dijon mustard
olive oil

Directions:
Directions:
Cut up chicken into 1 inch pieces. Brown the chicken a little in olive oil, add the chopped up onion. Put in the risotto, brown that slightly, then add the cut up mushrooms and the peppercorns. Add the chicken cubes and water. Add the mustard and let it all cook until all the water is gone, but not dry.

This is a recipe I found in a cookbook that I changed a little. It didn't have the risotto. It had milk and flour which I eliminated. We like this much better.
