1 beef eye-of-round roast, 2-3 lbs.
1 tbsp. vegetable oil
Garlic powder
Ground pepper
Kosher or Sea Salt

Directions:
Directions:
Preheat oven to 500 degrees. Rub roast with vegetable oil. Sprinkle roast with garlic powder and pepper, then cover roast with thin layer of sea salt. Place roast on rack in shallow roasting pan. Do not cover. Bake at 500 degrees for 6 minutes per pound or at least 20 minutes. Turn off oven, do not open oven for 2 hours. Remove from oven and let roast "rest" for at least 15 minutes before slicing.
