Pasta - you choose
Baby spinach
Red pepper sliced/minced
Onion chopped/sliced
Feta cheese
Note: Use the appropriate amount of ingredients for the number of people you are serving.

Directions:
Directions:
Boil water for pasta. Add pasta and cook according to package directions. Meanwhile, saute onion and red pepper in olive oil or a tablespoon or two of water on medium low for 5 minutes. Add appropriate amount of spinach to skillet and saute until it starts to wilt. Serve over pasta and top with feta cheese.

I make this as a side dish often. For just Tom and I or when we have guests. It's very easy and relatively quick. Goes well with most meat.
