5 to 6 lb small sliced zucchini
3 med onions, thinly sliced
½ c pickling salt
3 trays ice cubes
3 c sugar
3 c vinegar (5%)
1 ½ tsp turmeric
2 tsp celery seed
2 tsp mustard seed
1 tsp ginger

Directions:
Directions:
Sprinkle salt over the zucchini and onions and cover with ice cubes. Let stand at least 3 hours. Drain off and rinse in cold water. Combine sugar, vinegar and spices to a boil. Add drained zucchini and onions. Heat to boiling and simmer for 2 minutes. Put in jars and seal. Makes 6 to 7 pints.
