12 c zucchini, ground
1 green pepper, ground
1 red bell pepper, ground
4 c sliced onions, ground
5 Tbsp salt

Syrup:
2 ½ c vinegar
5 c sugar
1 Tbsp dry mustard
¾ tsp nutmeg
¾ Tbsp cornstarch
¾ tsp turmeric
1 ½ tsp celery seed
½ tsp black pepper

Directions:
Directions:
Cover sliced zucchini, peppers, and onions with salt and let stand overnight. Next morning, wash and drain well. Set in colander or sieve. Put syrup ingredients in large kettle. Mix and cook until it starts to thicken. Add vegetables and cook slowly for 30 minutes. Put in sterilized jars and process in boiling water bath for 15 minutes (adjust for altitude). Make 6 to 7 pints.
