sour cream
butter
shredded Cheddar cheese
salt
pepper

Directions:
Directions:
Scrub potatoes, prick several times with fork. Bake at 400 for one hour. Cut off top of potato lengthwise. Carefully scoop out pulp. Combine pulp, sour cream, butter, salt and pepper and mash until fluffy. Spoon mixture back into potato shells. Sprinkle shredded cheese over top. Bake at 400 for 10 minutes or heat in microwave. These can be made ahead and refrigerated until serving time.
