1 1/2 C flour, 1 C whole bran cereal, 2 1/2 t baking powder, 1 t cinnamon, 1/4 t salt, 1/4 t nutmeg, 1 beaten egg, 1 C milk, 1/2 C brown sugar, 1/4 C oil, 1 t finely grated lemon or orange peel, 1/3 C chopped nuts

In a bowl mix together the flour, bran cereal, baking powder, cinnamon, salt and nutmeg. Make a well in the center. In another bowl, stir together the egg, milk, sugar, oil and lemon peel. Add the mixture all at once to the flour mixture. Stir, just till moistened. Fold in nuts. Cover and refrigerate up to 3 days. To bake: gently stir. Line muffin pan with baking cups. Fill 2/3 full. Bake at 400º for 15-20 min.
