5 lbs Potatoes diced
8 hard boiled eggs diced

Sauce: 4 eggs beaten
1 C vinegar
1 t dry mustard
1 t salt
1 1/2 C sugar
1 C water
2 T flour
1 chopped onion


Directions:
Directions:
Peel, dice and boil potatoes until tender. Drain and set aside.

Hard boil eggs, cool and dice. Set aside

In a sauce pan, combine the sauce ingredients. Bring to a boil (slowly) stirring constantly, until thick. Pour over potatoes and eggs. Toss to coat.

May be served warm or cold.

To make smaller portions, adjust the amount of potatoes and hard boiled eggs. I make the same amount of sauce but only use the necessary amount to coat the potatoes. I freeze the left over sauce in a freezer container so that I have some on hand.
