5 lb. Yukon gold potatoes, peeled
One sweet (Vidalia or Walla Walla) onion (optional)
Parmigano cheese, grated
2.5 cups chicken or vegetable broth
Nutmeg
Salt
Pepper
8x12 casserole dish

Preheat the oven to 400º

Pour the broth into the casserole.

Slice the potatoes very thinly.

Slice the onion thin.

arrange layers of the potatoes in the dish.

On each layer, sprinkle some nutmeg, cheese, salt and pepper

Separate the layers with the onions.

Bake in the oven for 1.25 to 1.5 hours
