8 oz. diced cooked chicken breast
3/4 cup canned black beans, rinsed and drained
1 4 oz. can diced green chiles
1/3 cup nonfat sour cream
1 tsp. chili powder
8 (6 inch) corn tortillas
salt and pepper

White Bean Guacamole:
1/2 cup white beans, drained and rinsed
2 avocados
1 1/2 teaspoons lime juice
3 tablespoons chopped fresh cilantro
1/2 teaspoon cumin
1/2 teaspoon garlic powder
salt and pepper
Directions:
Directions:
Preheat oven to 400º. Coat a shallow roasting pan with cooking spray. In a medium bowl, combine chicken, black beans, chiles, sour cream, and chili powder; mix well. Spoon about 2 tablespoons of mixture in a line down the center of each tortilla. Roll tortillas and place them seam side down side by side in the pan. Spray with cooking spray and season with salt and pepper. Bake 25 minutes.

White Bean Guacamole:
In a medium bowl, mash white beans and 2 avocados, leaving large chunks if desired. Fold in lime juice, cilantro, cumin & garlic powder. Season with salt and pepper. Spoon over Taquitos and serve.
