Crock Pot Roast Beef Recipe

1 Beef Roast (chuck, sirloin tip, rump, etc. 3lbs +)
1 Large Onion, sliced in 1/2" rounds
1 Bag Baby Carrots (use as many as you like)
2 or 3 Yukon Gold Potatoes, peeled and quartered
1 Can Cream of Onion Soup
1 Can Cream of Celery Soup
1 Pkg. Dry Onion Soup Mix (Lipton)
1 12 oz. Can of Coke (not diet)
Seasonings of your choice (What I use is: salt, pepper, spicy season-all, garlic powder, granular beef bouillon)
2 Tbsp. oil
1 Cup of Red Wine (your favorite to drink)
Kitchen Bouquet (enough to make the gravy the color you like)

Trim fat and silver skin from roast.
If necessary, cut the roast in pieces to fit crock pot.

Rub your seasoning mixture all over roast.

In a large heavy skillet, heat the oil on med. high heat until hot. Add the roast and brown the on all sides.

Remove roast and deglaze the pan with the red wine. Keep the heat at about medium. Let this simmer while stirring to remove the brown bits, about five minutes.

While roast is browning, prepare vegetables and place in crock pot, starting with the onions on the bottom.

Mix together the soups, dry onion soup packet and the can of coke. Whisk until incorporated and smooth.

Place browned roast on top of veggies and pour the soup mixture over the roast.

Cook on low setting of crock pot for 7 - 8 hours.
