Cake-
3/4 c. butter, softened
1 1/4 c. brown sugar
3 eggs
1 t. ginger
1 1/2 t. vanilla
1/4 t. salt
1 1/2 c. flour
1/2 t. baking powder
3/4 c. diced dried cranberries
4 ounces white chocolate, chopped

Frosting-
4 ounces cream cheese, softened
3 c. powd. sugar
4 t. lemon juice
1/2 t. vanilla

1/4 c. diced dried cranberries

Drizzled Icing-
1/2 c. powd. sugar
1 T. milk
2 t. vegetable shortening

Directions:
Directions:
Preheat oven to 350º. Make cake by beating butter and brown sugar together until smooth. Add eggs, ginger, vanilla and salt and beat well. Gradually mix in flour and baking powder until smooth. Mix 3/4 c. cranberries and white chocolate into batter by hand. Pour batter into a buttered 9x13 in. pan. Bake for 35-40 min. or until cake is light brown. Cool completely.

Make frosting by combining cream cheese, 3 c. powd. sugar, lemon juice and vanilla until smooth. Spread over cool cake. Sprinkly with 1/4 c. cranberries. Whisk together 1/2 c. powd. sugar, 1 T. milk and shortening. Drizzle over top of cranberries. Cover and let chill in the fridge for a few hours. Cut the cake in half lengthwise, and then cut into 4 sections across the width. Slice each section in half diagonally, to make 16 bars.
