"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Oven Kalua Pig, by Lauralee Angell, is from Suwanee Ward Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
3 -4 lb. pork butt 3 T. coarse salt 2 T. hickory smoke seasoning (liquid smoke) Cabbage leaves Foil
Wash and pat pork dry. Rub with salt. Place pork on cabbage leaves (fat side up), pour liquid smoke over top. Cover completely with cabbage. Wrap completely in foil (liquid tight). Place in a pan and bake at 300º for 5 -6 hours.
Hint: The lower the temp. and longer the cooking time, the better the taste. You may want to play with the measurements according to personal tastes.
