1- 20 ounce can pineapple
1-pint package cherry tomatoes
2 lbs. chicken- cubed slces
1 lbs. small prawns- deviened & shelled (optional)
1/2 lb. halibut (optional)
2- 3 tsps. fish sauce
1/4 -1/2 cup sugar
1 tsp. butter
1/2 tsp. ground cumin
1/2 -1 1.41 ounce pk. tamarind soup base
3 - 4 cloves garlic - peeled and minced
1/4 tsp. salt

Directions:

In a seperate fry pan turn on medium high heat and add 1 tsp. of butter and minced garlic.saute until brown and turn off heat and set aside for latter.

In a large Dutch oven, place chicken and fill half full with water. Set on high heat and boil for 15 minutes. Reduce heat to medium and add can of pineapple tamarind soup base, fish sauce, sugar, cumin, salt. let simmer of another 15 minutes.
add halibut, and shrimp and simmer for another 15 minutes. Add cherry tomatoes and sautéed garlic.
Serve with white steam rice. ©
