1 1/2 c. chopped roma tomatoes (6 to 8 tomatoes)
2 tbsp. diced red onion
1 large garlic clove
2 tbsp. chopped fresh basil
2 tbsp. olive oil, divided
1/2 tsp. red wine vinegar
1/4 tsp. salt
dash of black pepper
1/2 loaf french baguette
1/4 tsp. garlic salt
2 to 3 sprigs italian parsley

Directions:

Combine the tomatoes, red onion, garlic, and basil in a medium bowl. Add 1/2 tbsp. of oil, then add vinegar, salt, and pepper and mix well. Cover the bowl and let stand in the refrigerator for at least one hour.
Slice baguettes diagonally. In a small bowl mix the rest of the oil and garlic salt. Spread on the sliced bread and then broil in the oven until lightly browned. 1-2 minutes. Once you have spooned mixture onto bread, garnish with parsley and parmesan.
