1/2 cup butter 5 oz. Gruyere cheese
7 T flour 1/4 cup Parmesan cheese
salt and pepper
dash of nutmeg
2 cups warm milk
10 oz. any pasta

Directions:
Directions:
Preheat oven to 400. Melt butter in saucepan over low heat. Remove from heat and sift in flour, stirring constantly so no lumps form. Return to heat and cook for 1-2 minutes, so that flour is light brown. Pour in milk a little at a time, stirring constantly. Add seasonings. After a few minutes mixture will boil. Cook for 3-4 minutes stirring constantly. Lightly butter oven proof dish and cover bottom with a layer of cooked pasta. Layer the cooked pasta, the white sauce, the Gruyere, and the Parmesan until all of the ingredients are used up. Bake in the oven for about 20 minutes or until a golden crust has formed.
