1 1/2 c. sifted flour
1 c. sugar
2 tsp. baking powder
1/2 tsp. salt

1/3 c. soft shortening (or butter)
2/3 c. milk
1 tsp. vanilla flavoring

1 egg

Directions:
Directions:

Heat oven to 350º. Sift flour, sugar, baking powder and salt.

Add shortening, milk, and vanilla. Beat 2 minutes, medium speed. Add egg. Beat 2 minutes more.

Pour into greased and floured 8 X 8 X 2 inch square pan. Bake 30 to 35 minutes, until toothpick stuck into center comes out clean.



When I started in Home Economics Education in 1957, my brother Darrell bought me "Betty Crocker's Dinner for Two Cook Book," which contained this recipe. It is quick, easy and especially good when served with strawberries for strawberry shortcake. It is also delicious with fresh sliced peaches. We have used it for cupcakes, birthday cakes and everything in between.

The Dinette Cake is also the batter I use in my recipe for Pineapple Upside-Down Cake.
