1 lb cooked cheese tortellini cooled
1/2 of red and green pepper seeded and thinly sliced
2 scallions thinly sliced
1/4 c finely chopped fresh dill
8-10 fresh chopped basil leaves
2 T grated Parmigianino cheese
Salt/pepper

Vinaigrette:
1 tsp egg yolk
2 T balsamic vinegar
1 T Dijon Mustard
1/2 c olive oil
1/4 c safflower oil
Salt/pepper
Directions:
Directions:
Combine egg yolk, vinegar, mustard and whisk until well blended. Combine the oils, then add in a slow stream, whisking until blended.

Mix the tortellini with all ingredients.

Add 1 c of vinegarette to tortellini mixture. Toss.

Garnish salad with tomato wedges and toasted pine nuts, serve immediately or chill before serving.
