8oz uncooked rigatoni
1 T olive oil
1 cup finely chopped onion
1 (10oz) package frozen chopped spinach, thawed and drained
1 lb hot Italian sausage
1 (14.5oz) can Italian style tomatoes (diced)
1 (8oz) container chive and onion cream cheese (not whipped)
¼ tsp. salt
½ tsp. pepper
1 ½ cups shredded mozzarella cheese

Preheat oven to 375 degrees.

Prepare rigatoni according to package directions.

Meanwhile heat the oil in a small skillet and sauté onion.

Mix sautéed onion and cream cheese until cheese is melted.

Add spinach, sausage, tomatoes, salt and pepper to the cheese mixture and mix together. Stir in the pasta until everything is incorporated.

Put in glass baking dish, cover with foil and bake for 30 minutes. Uncover, add cheese and cook for another 15 minutes.
