Potato mixture:
5 - 6 sweet potatoes
2 eggs, beaten
1/2 cup milk
1/2 stick butter, melted
1 cup sugar
1/2 cup orange liqueur
2 tsp orange flavoring
1 1/2 tsp salt
1 tsp vanilla


Topping:
1 stick butter
2 cups brown sugar
chopped pecans (about a cup or two)

Potato mixture:
Rinse potatoes and rub with oil. Bake in a foil lined pan at 350 degrees for about an hour (until done). Set out and cool. Then peel and mash. Add eggs, milk, butter, sugar, orange liquor, salt and vanilla and orange flavorings to potato mixture. Butter casserole dish and pour in potato mix.

Topping:
Melt the butter in shallow saucepan. Stir in brown sugar. Layer chopped pecans on top of potato mixture. Pour butter/sugar mix over top of the pecans.

Bake at 350 degrees for 45 minutes.

This dish tends to like to "bubble" up in the oven. To prevent spatters (and possibly prevent your kitchen from burning down) place a large sheet of aluminum foil under the baking dish to catch overflows. Orange juice can be used in lieu of the orange liqueur.
