Ingredients:  
1 medium eggplant, cut lengthwise in 1/8" slices
1/4 cup plus 2 tbs olive oil
2 tbs red wine vinegar
1/2 tsp sugar
1 garlic clove, pushed thru press
1 tsp chopped Italian parsley
1/4 tsp oregano
1/4 tsp black pepper
pinch of crushed red pepper flakes
6 ounces your favorite cheese

Directions:
Directions:
1) sprinkle eggplant with salt and place in colander for 15 min. to drain bitter juices. Rinse and pat dry with paper towels.

2) Brush slices with 2 tbs olive oil. Grill or broil 3 min. per side (until lightly charred) and arrange on platter.

3) Combine remaining oil,vinegar,sugar,garlic,parsley,oregano,black and red pepper and a pinch of salt . Drizzle over eggplant slices

4) sprinkle grated cheese over eggplant, and serve
