1 1/2 cups broth
1 1/2 lbs boneless skinless chicken
breasts
2 cans black beans, rinsed and drained
2 cans kidney beans, rinsed and drained
1 can corn
1 can tomatoes & chilies
1 can Mexican-style tomatoes
2 cans diced tomatoes
1/2 red pepper, chopped
1/2 green pepper, chopped
1 cup celery, chopped
1 onion, chopped
1 envelope taco seasoning mix

Directions:
Directions:
Stir the envelope of taco seasoning mix with
broth in a 6 quart crock-pot.
Remove fat from chicken breast and add to
crock-pot.
Cook on low about five hours. Cut chicken
into bite-size pieces or shred with two forks.
Add all other ingredients to crock-pot. Stir.
Cook on high for 2 hours or low for 4 hours.
