8 Red Delicious apples (4 lb.)
2/3 c. sugar
peeled and chopped
3 T. freshly squeezed lemon juice
into 1" pieces)
(from 2 lemons)
1 tsp. ground cinnamon

Directions:
Directions:
Place apples, sugar, lemon juice, cinnamon and 1/2 cup water in a large saucepan and cook over medium heat until very tender. Stir often so that apples do not scorch (about 45 minutes). If necessary, add additional water to apple mixture, up to 1 cup, while apples cook. Remove the mixture from heat.

Using a potato masher, mash into sauce, leaving some of the chunks. Let cool. If making ahead of time, chill, covered, until ready to use. Allow to warm to room temperature before serving.
