Eggplant, cut in 1-inch pieces
Ripe plum tomatoes
Onion
Garlic
Red pepper
Balsamic vinegar
Ricotta
Fresh chopped basil & parsley
pasta

Directions:
Directions:
Coat eggplant with oil or Pam and broil till golden (If you like sprinkle with breadcrumbs). In the meantime, chop plum tomatoes and add red pepper to sautéed onion and garlic. Add vinegar and cook about 15-20 minutes. Cook pasta and drain. Mix pasta with ricotta, tomatoes, eggplant, basil, parsley and top with grated cheese.
