4 Tbsp. salad oil
1 medium onion, chopped
1 clove garlic, minced
1 green pepper, chopped
1/2 pd zucchini sliced
1 3/4 pd eggplant, peeled and cubed
1 can tomatoes
1 tsp. dried basil
1 tsp salt
1/8 tsp. black pepper

Directions:
Directions:
Heat oil in large skillet. Saute onion, garlic and pepper in oil until onion is transparent. Stir in zucchini and eggplant. Cook 8-10 minutes, stirring constantly , add remaining ingredients stirring constantly, until cooked throughout about 3 to 5 minutes.
