2 tbsp cornflour
3 cups (750ml) milk (low fat can be used)
juice of 1/2 lemon
250g boneless fish fillets (eg perch or ling etc)
250g skinless ocean trout or ocean fish, cubed.
250g button mushrooms sliced
4 green onions (shallots) sliced
1 tbsp roughly chopped dill
1/2 cup (60g) grated tasty cheese.

Preheat grill to medium.
Place cornflour in a medium heavy based saucepan. Gradually stir in milk until smooth. Cook on med, heat stirring, until boiling and thickened. Simmer for 3 minutes. Stir in lemon juice and season to taste.
Add fish, button mushrooms and green onions. Cook stirring for 3-5 minutes until fish is cooked. Stir in dill.
Spoon mixture into 4 ovenproof gratin dishes. Sprinkle with tasty cheese. Grill for 3-5 minutes until golden. (Ingredients can be placed in a casserole dish and cooked instead of individual dishes)

Any fish can be used it just depends on your taste.
I use only about 300g of fish for 2 people and a little less of the other ingredients.
