1 lb. ground beef
1/2 c. chopped onion
1 envelope taco seasoning mix
1/4 c. chopped green chilies or regular green pepper
1 1/4 c. milk
1/2 c. flour
2 tbsp. margarine
3 eggs
2 tomatoes sliced
1 c. shredded Monterey Jack or cheddar cheese
sour cream or yogurt

Directions:
Directions:
Heat oven to 400°. Grease 10 inch quiche dish or pie plate. Cook and stir beef and onion over medium heat until beef is brown; drain. Stir in seasoning mix. Spread in plate; sprinkle with chilis. Beat milk, flour, margarine, and eggs until smooth, 15 seconds in blender on high or 1 minute with hand beater. Pour into plate. Bake 25 minutes. Top with tomatoes, sprinkle with cheese. Bake until knife inserted between center and edge comes out clean, 8 to 10 minutes longer. Cool 5 minutes. Serve with sour cream (yogurt), chopped tomatoes if desired.
