2 8-oz packages of cream cheese (softened)
1 1-oz package of dry ranch dressing mix
2 1/2 c shredded Cheddar cheese (sharp is best)
1 1/2 c chopped pecans

Directions:
Directions:
In a medium bowl, mash cream cheese. Mix in dressing mix and cheddar cheese. Shape the mixture into two balls. Quickly toast the nuts in a dry skillet over high heat. Let nuts cool. Roll the cheese balls in the nuts to coat. Wrap in plastic wrap and refrigerate until ready to serve. Serve with crackers.
