4 c. whole, peeled tomatoes
4 c. tomato juice
20 fresh basil leaves
1 c. of heavy whipping cream
½ c. (1 cube) unsalted butter, softened
salt and pepper to taste

Directions:
Directions:
Crush tomatoes with hands or fork and combine with juice in saucepan. Simmer for 30 minutes over med-low heat. Allow to cool slightly. Place the mixture in a blender or food processor. Add 12 basil leaves and blend. Add 3-4 more leaves at a time until all 20 have been blended. Return mixture to saucepan and add cream and butter. Stir over low heat until melted. Stir in salt and pepper.
