2 racks of lamb, sliced for individual serving

For marinade:
1 cup soy sauce
1 T. chopped ginger
2 T. olive oil
1 1/2 cups chopped scallions
2 T. chopped garlic
2 T. honey
1/4 cup chopped mint
1/4 cup chopped cilantro
1/4 cup chopped broadleaf parsley
1/2 cup red wine vinegar

Combine marinade ingredients in a bowl. Transfer to a casserole dish or bag that can be sealed. Marinate lamb in refrigerator for 1 to 2 hours. 30 minutes prior to cooking remove lamb from refrigerator. Over a medium high heat, grill lamb for 10 to 12 minutes, a little less for rare, a little more for well done. Serve with couscous, or other Mediterranean sides.

Tip: Lamb chops are about the easiest thing to grill. This recipe requires a little work. For a simple marinade, combine 1/4 cup of olive oil, 1/4 cup red wine vinegar, chopped rosemary, and a sprinkle of salt & pepper. Grill the same way.
