2 medium-sized tart apples
2 C flour
1/2 tsp salt
4 lg eggs
2 C milk
12 T butter, melted
sorghum or syrup

Directions:
Directions:
Peel, quarter, and core apples. Cut into 1/4 inch slices. Combine flour and salt. Make a well in the flour mixture and pour the eggs into the well. Gradually mix the eggs into the flour. Gradually add milk and beat until just smooth. In an 8 to 9 inch skillet, melt 2 tablespoons butter. Add 1/4 of the apple slices and cook until lightly browned. Pour 1 cup of the batter over the apple slices and cook for 2 to 3 minutes or until browned around the edges. Invert the pancake and cook the other side until browned. Roll the pancake and cover with foil to keep warm. Fry the remaining pancakes the same way. Serve hot with sorghum and remaining butter.
