31/2 c. flour 3c. sugar 2tsp. baking soda 1 1/2 tsp. cinnamon 1tsp. nutmeg 1 1/2 tsp. salt 4 eggs, beaten 1c. cooking oil 2/3 c. water 1 can pumpkin (16 oz.) walnuts, if desired
Combine flour, sugar, soda, salt, cinnamon, and nutmeg. In another bowl, combine eggs, oil, water, and pumpkin. Mix well. Stir into dry ingredients. Stir in nuts. Pour into 3 greased 8 X 4 loaf pans and top with additional nuts. Bake at 350º for 1 hour. Cool before slicing.
