1/2 c balsamic vinegar
2 T brown sugar
Steak:
1 T Dijon mustard
3 garlic cloves, crushed
1 (2lb) top round steak, trimmed (1 1/2" thick)
1/2 tsp kosher salt
1/2 tsp cracked black pepper
cooking spray

Jam:
1 T olive oil
8 c sliced red onions (1 1/2 lbs)
1/4 c balsamic vinegar
2 T brown sugar
2 T fresh ginger, minced
6 cloves garlic, minced
1 T thinly slice basil
1/2 tsp kosher salt
1/2 tsp cracked black pepper

1. Prepare first 4 ingredients in large ziplock bag, add steak. Seal and marinate in refrigerator 2 hours, turning occasionally.
2. Preheat broiler.
3. Sprinkle steak with salt and pepper. Place on broiler pan coated with cooking spray. Broil 10 minutes on each side (med-rare). Place steak on cutting board, cover loosely with foil. Let stand 10 minutes. Cut steak against grain.
4. Jam - heat oil in Dutch oven over med-high heat. Add onion; cook 20 -25 minutes or until deep golden brown, stirring frequently. Add 1/4 c vinegar, brown sugar, ginger and garlic, cook 2 min. or until liquid almost evaporates. Stir in basil, salt and pepper.
Serve with Texas toast. Bake sourdough bread slices 350º F for 8 minutes or until light brown and brush with garlic butter.
